At the Celtic Ross Hotel, we are constantly inspired by the people and places that make Rosscarbery such a special community. This year, we’re especially proud to join in celebrating a remarkable milestone: 50 years of Hubbert’s Store, a true local treasure and a shining example of resilience, creativity, and family spirit.

A Journey That Began in 1975

It all started in March 1975, when Willie and Nora Hubbert saw potential in a three-storey building in West Square, Rosscarbery. The property, once a bustling grocery and bakery, had fallen into disrepair—but with determination and vision, the Hubberts transformed it into something extraordinary.

On 4th July 1975, Hubbert’s Foodstore opened its doors. From that day forward, it became a cornerstone of daily life in Rosscarbery, supported by loyal customers, friends, and family.

Reinvention and Resilience

Like any great story, Hubbert’s has evolved with the times. From foodstore to craft shop, café, and now Dress 2 Impress, their beloved vintage and pre-loved fashion store, the Hubberts have embraced change while keeping their community at the heart of everything they do.

  • In 1997, as the Celtic Ross Hotel opened its doors to welcome visitors to Rosscarbery, Hubbert’s also launched their Craft and Coffee Shop. Showcasing Irish-made goods and delicious home baking, it quickly became a hit with locals and tourists alike.
  • In 2010, at the height of economic uncertainty, Nora took another leap of faith, creating Hubbert’s Vintage & Pre-Loved Fashion Consignment Store – Dress 2 Impress. Full of colour, creativity, and unique finds, it has brought joy and style to so many who have walked through its doors.

Each chapter of Hubbert’s journey tells a story of ingenuity and resilience. Through challenges and triumphs, Nora and her family have always found ways to adapt, to dream, and to serve their community with passion.

More Than a Shop

Over five decades, Hubbert’s has been more than just a business. It’s been:

  • A gathering place where laughter, stories, and friendships were shared.
  • A showcase of sustainability and craftsmanship long before they became buzzwords.
  • A reminder of the power of local enterprise and the importance of community support.

Walking into Hubbert’s has often been described as an “instant boost of energy”—a space full of vibrant colours, creativity, and heart.
